Smooooooooooooooth



The days keep getting longer, the temperature keeps rising, and it's turning into smoothie season.

Nick and I have been playing with smoothie recipes. Smoothies with oatmeal. Smoothies with peanut butter. And now - smoothies with spinach!

Ingredients:
 - 1/2 green apple (cored and diced, skin on)
 - 1/2 orange (peeled)
 - 1/2 lime's juice (fresh only, please!)
 - 1/3 c. pineapple (tidbits in juice - include some juice with pineapple pieces)
 - Handful of spinach (rinsed, chiffonaded)
 - 1 c. ice cubes

1. Combine all the ingredients in a blender.
2. Blend.
3. Pour into one really big glass, or two glasses if you feel like sharing (bet you won't, though).
4. Drink and enjoy the benefits of spinach without the bitterness!

For a quicker meal, prep the ingredients (sans ice cubes) and stick them in a jar.

Layer the diced apple first, then the citrus, then the spinach on top. The citrus juice will keep the apple pieces from browning, and keeping the spinach on top will keep it from wilting in the liquid.  Screw the lid on tight and store it in the jar up to a week.

Then whenever you're ready for some vitamin rich deliciousness, just pour the jar into the blender, add some ice, and whip up a delicious meal-on-the-go.


Seriously. You won't regret it.
